Your tweaking seems to be a subset of their definition. It also matches nicely what you've done.
I think I needed your label, "graphite on paper on book" along with looking at the enlarged images to see that it was "paper stretched over an actual book." It's hard to convey information of a three-dimensional nature here.
I've never been to the Center for Book Arts in New York but have been to the one here in the Twin Cities. Here's a bit about the current exhibit there as well as some nice photographs of the work.

I am sorry, you must be mistaken, that is a slab of granite.
